Mini mince pies

Preparing for Christmas, today's effort is 48 mini mince pies. They wiil go into the freezer until Christmas day when they will be dfrosted and refreshed in the oven, then dusted with icing sugar. Some have shortcrust pastry stars and the remainder have frangipan tops sprinkled with slivered almonds.

I'm drooling I am, this year I'm not doing very much Christmas baking, my cholesterol is high so I have to try and get it back down to a normal level :(

A favourite of mine that I have to be careful with these days. Mum used to lace her fruit mince heartily with whisky!

do they revive well? I would love to do this but a bit afraid that the 'out of the oven' taste would disappear? can you let meknow as it would save a lot of 'on the day' madness! great blog as well

Umatji, Yes I think they taste better after their 'rest' in the freezer, it seems to mellow the fruit mixture. They only need a few minutes in the oven, just to slightly warm up.
Where in the Adelaide Hills are you ? We are at Lenswood.
